Pink Valentines with beets

Happy Valentine's Day! (let's pretend I said that yesterday.)

So much for the continuous posting, huh?


But I made Valentine cookies! And I used beet juice in the frosting, which made a lovely color. =)

Vegan, of course. And very little soy too, just in the "butter".

    Brilliant idea for the colouring... Hmmm I should think about that next time I consider coloured frosting. I've never bought food colouring or coloured icing because I'm afraid of it. I like things natural.
    Absolutely brilliant.
    With the number of Borschts we make (My mom is Polish), having beets around is a regular thing. :)

  2. You should, it's lots of fun! I've used food coloring in the past, but I don't like it very much. I'm definitely going to try and use natural colors from now on. I need to figure out how to make green, because that's my favorite frosting color. haha. =)
